Quinoa: I cook 1 cup of quinoa according to package directions. This way, I can have enough quinoa for the week to make more scrambles. Eggs: I add 2 eggs to my scrambles but it’s up to you and how hungry you are. I usually make 4 eggs for my hubby!Spinach: Chopped, fresh spinach is best. However, you can add really any vegetable you prefer: kale, bell peppers, mushrooms, onions, asparagus, etc. Cheese: Mozzarella, white cheddar and Parmesan are all delicious options. Garlic: I love garlic so I add about 2-3 cloves per serving! You can omit if you don’t prefer it in your eggs.Basic seasonings: salt & pepper! You can add in basil, dill, chives or thyme too!
