Olive oil: this is my favorite olive oil to use! I recommend using a high quality extra virgin olive oil that’s rich and bold in flavor since it’s the star of the show! Balsamic vinegar: gives this dip just a touch of acidity and sweetness. You can also use a fresh squeeze of lemon juice instead if you prefer.  Garlic: I highly recommend using fresh cloves of garlic. Garlic powder just will not taste the same, nor provide the same texture. You can easily adjust the amount of garlic based on your preference.  Seasonings: you’ll need Italian seasoning, salt and red pepper chili flakes (optional if you like a bit of heat!) Cheese: I used freshly shredded asiago and parmesan cheese. You must use freshly shredded cheese for this recipe to taste right!

If you want to switch it up, try one of these flavorful variations: Lemon and Herb Extra virgin olive oil, lemon zest, lemon juice, fresh rosemary, fresh thyme, minced garlic, salt, and pepper. Spicy Harissa Extra virgin olive oil, harissa paste, minced garlic, lemon juice, salt, and pepper.
