With a mixture of ground beef and Italian sausage, a smooth passata base, lots of flavorful veggies and spices, and finished off with white rice and shredded cheese, lemme tell ya – this soup is HEARTY. And oh so delicious. I love how easy the prep for this Slow Cooker Stuffed Bell Pepper Soup is. Simply brown the meat, chop the veggies, mix everything together in the crockpot, and let it cook on low while you go about your day. When it’s closer to dinner time, cook up some white rice to finish it off with, and you have all the best parts of stuffed peppers, with SO much less hassle or mess.
